I’ve been a squash fanatic for years, even though I had only tried three varieties: summer, butternut, and spaghetti. I just don’t see other types in my grocery stores very often. That’s probably because I live an hour and a half from the nearest interstate or major highway. Yep, you read that right. Hard to believe, but true. Folks around here raise a lot of gardens, but squash varieties just haven’t been included for some reason.

Whenever we make a trip to the “big city,” I try to stop by a grocery store to pick up a few things that I just can’t find locally.  On my last trip, they had a beautiful selection of squash varieties, so of course I picked up one or two of each!  One good thing about squash is that they tend to keep well – much longer than many other vegetables.  You can read more about winter squash at 8 Great Winter Squash to Try Now.

Another thing I love is honey….not just any honey – local honey.  It’s so good for you, and is supposed to even help with allergies.  I found a recipe on Pinterest that called for maple syrup, but I made an adjustment to include honey.  I hope you and your family enjoy!

Instructions
  1. Preheat oven to 400F.
  2. Take the buttercup squash and cut it in half. Remove seeds and stringy flesh. Cut again so that you now have four pieces.

  3. Make score marks with knife and place quarters on baking sheet or large casserole dish.

  4. Rub butter over the flesh of each piece. Then rub brown sugar over the flesh. It will stick to the butter. Drizzle the honey over the squash quarters.
  5. Bake in the oven for approximately 35-45 minutes.
