If there is one thing I love, it’s Grippo’s BBQ Chips. It’s the sweet taste of my childhood. When spending lazy summer days at the public pool, we’d grab a bag of Grippos and a can of pop (no, it isn’t soda) at intermission. Pure love. Of course, I love Grippo’s Baked Chicken.
What?? You’ve never tried Grippo’s?? Well, bless your heart. I feel sorry for you.
They’re regional, so some of you may have never heard of them. Grippo’s actually makes big boxes of the stuff that are hotter than anything you’ll find in the Grippo’s bags. Folks here mail those boxes to family in the military who are unlucky enough to be sent somewhere with no access to that BBQ goodness.
The next best thing to eating Grippo’s chips is using them in recipes. There are a million ways of incorporating the chips, spice, or the BBQ sauce (yes, they make all three) into recipes. If you cook with Grippo’s, feel free to share in the comments. I’d love to know!
Today, I’m making Grippo’s Baked Chicken. It’s so easy, and I bake it so that I can save some calories for the chips. Of course, you can substitute any brand of BBQ chip, although I can’t guarantee the result will be as good.
6 Chicken Breasts
1 Bag of Grippos (or 1 sleeve of a twin pack)
2 Eggs (may substitute milk, mayo, or Greek yogurt)
Preheat oven to 375. Crush chips and place in a resealable bag. Spray 13x9x2 pan with cooking spray.
Dip each chicken breast into egg, then place in bag, seal, and shake to completely coat. Bake until golden brown and crisp, usually around 20-25 minutes.
Makes 6 servings.
